Savoury Muffins

 

Here’s a great recipe you can make on a Sunday afternoon to fill up the school lunch boxes, and healthy too. Makes 12 in muffin tin.

Ingredients

  • 1 and a half cups of self raising flour.
  • 1 teaspoon of baking power.
  • 1 egg.
  • 1 cup of milk
  • Your own flavour of cheese – based on taste.
  • Fillings of your choice – Bacon, Onion, Spinach, Corn, Ham, Paprika, Morrocan spice, Pineapple, Leftovers, or whatever takes your fancy. 

 Instructions.

  •  Mix all ingredients together in a bowl, be careful not to over mix.
  • Spoon into a greased muffin tin and baked for approximately 20 mins or until golden brown @ 180-200 degrees.

Important Point – remember to preheat your oven!

This is a wonderful quick and easy self crusting quiche, great for a quick meal, school lunch boxes or snack.

Ingredients

2 Large Zucchini’s – grated.

1 Large onion – chopped.

4 rashers of bacon – chopped.

2 tomatoes – sliced.

6 mushrooms – sliced (optional).

1 cup grated cheese.

1 cup self raising flour.

1/4 cup oil.

4 eggs.

Salt and Pepper.

Chuck everything except flour, oil and eggs into a bowl. Add flour, oil and then beaten eggs. Mix together well. Season with salt and pepper. Pour into a well greased dish and bake in moderate oven for 30-40 minutes.

This is really yummy and so easy.
